Cooking in a less-than-ideal kitchen
Here at the Eat Smart Home Base we have the worst set up kitchen I have ever seen (don’t worry, your meals are cooked at a commercial kitchen, not there).
We rent, so no renovation is coming on the home front. And, to be honest, we don’t cook at home all that much. The last Big Meal we tried to cook was Christmas Eve. Tommy dropped a knife on his bare foot (ouch), his son sliced his hand open washing a knife, each of them spilled brussel sprouts on our kitchen floor, and then the kids got in a fight about the dishes. The Waltons we are not.
That said, we do manage to throw together meals on occasion, and if we can do it, you can too. I’ll be posting some ideas and recipes up here for things that we enjoy at home, and maybe you will too.
The weekends are a good time to give it a shot, because you may be more relaxed, you may have more time, and you may be less exhausted. If not, just order takeout. You are eating those Eat Smart meals so you can splurge sometimes.
Here’s a simple, quick meal that you can make for one or more people. Maybe the kids will even eat it. If not, get out those frozen waffles and eat their share.
7 minute eggs
Eggs are a great option for any meal. They are packed with protein, satisfying, and are great on their own or with easy sides. The bar is not high for scrambling or frying, and it is super quick. That said, overcooked eggs are not delicious, and it is really easy to overcook in an effort not to undercook. When this recipe came across my Facebook feed from Saveur, I knew it was going to be easy, but it is also quick, reliable and delicious. Let's get started!
Fill a saucepan with enough water to cover however many eggs you are going to cook. Bring the water to a boil, and then gently lower the eggs into the water. Use a spoon if you don't want to get up close and personal with boiling water.Let the eggs cook for 7 minutes. Then remove the eggs from the cooking water and run them under cold water to stop the cooking. This creates the perfect cooked egg white/slightly runny egg yolk.
I like to serve them with some toast and butter, and maybe a slice of ham if I have it at home (which I probably don’t). Otherwise, just salt and pepper, fork, and presto – a pretty satisfying breakfast. Bonus points for being easy to clean up.
